MAMA'S SHRIMP DIP
1/2 - 1 tsp SLAP YA MAMA seasoning
1 - 8 oz package cream cheese (softened)
1/2 cup mayo
3 - 4 TB ketchup
1/4 cup chopped green onion tops
1/4 lb cooked peeled/deveined fresh shrimp (chopped) OR 1 can tiny shrimp (drained) if fresh shrimp is not available
Mix cream cheese and mayo, add ketchup then onion. Stir in shrimp then add SLAP YA MAMA Cajun seasoning. Chill before serving. Great with any kind of chips, assorted crackers, in a bread bowl or even as a spread. Quick and easy... tastes so good it makes ya wanna Slap Ya Mama!
CAJUN SEAFOOD FETTUCINE
2 cups heavy cream
SLAP YA MAMA Cajun seasoning to taste (mild, medium or hot)
1 TB basil
1 cup chopped green onion tops
1 cup chopped parsley
1/2 lb peeled/deveined shrimp
1/2 lb crawfish tails
4 oz lump crab meat
1 lb uncooked fettuccine pasta
Directions:
Cook pasta according to directions. In a separate large sauce pan
combine cream, seasoning and herbs over medium heat. Stir constantly for
about 8 minutes then add seafood and cook until shrimp are pink. Stir
noodles and sauce together. Serves 5-7 people
SPICY CHEESE GRITS
1 1/2 - 2 tsp SLAP YA MAMA seasoning
6 cups water
3/4 cup butter
1 - 16 oz package American cheese slices
3 eggs
1 1/3 cups quick grits
Put seasoning and butter in water and bring to a rolling boil. Add grits, stir well. Cook 5 minutes at a reduced heat. Add a few slices of cheese at a time, stirring well until all slices are melted. In a separate bowl, beat eggs. Once all cheese is melted remove from heat. Stir in egg mixture and blend well. Pour into a 9 X 13 dish and cook for approximately 45 minutes at 350 degrees.
EASY CAJUN ETOUFFEE'
1 jar SLAP YA MAMA Etouffee Sauce Meal
3/4 - 1 jar water (less water = more spicy)
1 - 8 oz can tomato sauce (optional)
1 1/2 pounds raw shrimp peeled and deveined or crawfish tails, or any seafood
In a four quart pot combine SLAP YA MAMA Etouffee Sauce Meal, water, tomato sauce and raw seafood.* Bring to a boil and let simmer until seafood is cooked (approximately 3-5 minutes). Stir while cooking to prevent sticking. Serve over rice or pasta - feeds four to five people.
*Can substitute chicken for seafood, cook approximately 15 minutes.
Another tasty option is to mix in cream or alfredo sauce with the etouffee sauce for a spicy cream sauce - serve over pasta - DELICIOUS!
SLAP YA MAMA BURGERS
2 tsp SLAP YA MAMA seasoning
1 packet ranch dressing mix (dry)
1 lb ground chuck
Mix contents of ranch dressing packet with meat until evenly blended, add SLAP YA MAMA Cajun seasoning and stir well. Form burger patties to preferred size, grill and ENJOY!
CHICKEN AND SAUSAGE GUMBO - Authentic Cajun Style
SLAP YA MAMA seasoning to taste
5 quarts water
2 -3 Cornish hens*
1/2 - 1 jar Kary's dark roux
1 1/2 pounds smoked sausage (sliced)
1 onion (chopped)
1 bunch parsley (chopped)
1/2 bundle green onion tops (chopped)
Add roux to water and bring to a boil, stirring constantly until roux is completely dissolved - this is important to avoid sticking to the bottom of the pot! Add onion, parsley, onion tops, Cornish hens (whole) and sausage. Cook on medium heat until hens are done - usually about 1 1/2 hours. Serve over rice.
*Cornish hens can be substituted with a whole chicken - some prefer to remove poultry from gumbo pot, debone and then add back to gumbo prior to serving.
SPICY BOILED PEANUTS
1/2 cup SLAP YA MAMA Seafood Boil
2 TB SLAP YA MAMA Hot Blend seasoning
5 pounds canned boiled peanuts (Yes, CANNED - Peanut Patch or other brand)
Simply open can and pour peanuts (with the juice) into large crock pot or other pot on the stovetop. Add in SLAP YA MAMA Seafood Boil and Hot Blend seasoning and stir to mix well. Heat until peanuts and juice are warm, then eat and enjoy. It's that easy - delicious!! A spicy twist on a good 'ole southern favorite.
CAJUN ROASTED NUTS
2 tsp SLAP YA MAMA seasoning
1/2 cup butter/margarine (melted)
1 lb nuts (pecans, almonds, walnuts, etc)
Melt butter then add SLAP YA MAMA Cajun seasoning and stir. Toss nuts in butter mixture to coat well. Place nuts in a single layer on a flat baking pan. Preheat oven to 375 degrees and bake approximately 10-15 minutes. Great way to spice up a delicious snack!
"SLAP IT" Party Mix
2 - 2 1/2 TB SLAP YA MAMA seasoning
1 1/2 sticks butter/margarine (melted)
3 TB Worcesterchire sauce
2 cups deluxe mixed nuts
2 cups cheese nips
1 cup snack size pretzels
3 cups rice chex
3 cups wheat chex
3 cups corn chex
Melt butter then add SLAP YA MAMA Cajun seasoning and worcesterchire, stir. Separately, in a large roasting pan mix together nuts, cheese nips, pretzels, and all three chex cereals. Pour butter mixture over dry mixture and stir until coated evenly. Bake at 250 degrees for one hour, stirring every 15 minutes. Makes approximately 14 cups. Perfect gift idea for the holidays - put in small cello bags with recipe - your friends will love it!
ZESTY TWO MINUTE FUDGE
3/4 - 1 tsp SLAP YA MAMA Original Blend seasoning
1 (1 lb) box confectioners sugar
1/2 cup cocoa
1/4 tsp salt
1/4 cup milk
1 TB vanilla extract
1/2 cup (1/4 lb) butter
1/2 cup chopped nuts
In 1 1/2 quart casserole microwaveable dish stir sugar, SLAP YA MAMA Cajun seasoning, cocoa, salt, milk and vanilla until partially blended (mixture is too stiff to thoroughly blend all of the ingredients evenly). Put butter on top of the mixture, centered. Microwave on HIGH for two minutes (based on 1000 watts capacity). Remove and stir vigorously until all butter is blended, then add in nuts and mix well. Pour fudge mixture into a wax paper lined dish and chill for one hour in the refrigerator or 20 minutes in the freezer. Cut into squares (yields 36) or use a chili pepper cookie cutter for a fun shape and design.
